Spicy Scallops and Mushrooms

Ingredients

3 tb sp butter
500g button mushrooms
6 green onions(scallions), chopped
2 cloves of garlic, crushed
500g scallops, cleaned
60 mls dry white wine
1 red chili pepper, seeded and finely sliced
3 tb sp minced parsley.

Method

Melt butter in a large frying pan and cook mushrooms, green onions
(scallions) and garlic for 4-5 minutes. Remove from pan and set aside.

Add scallops to pan and cook for 2-3 minutes or until tender. Remove from
pan and set aside.

Stir in wine, chili pepper and parsley and cook over a high heat until reduced
by half. Return mushroom mixture and scallops to pan, toss to combine.

Serves: 4
