Pan Fried Sardines
with Mixed Herbs

Ingredients
3 tb sp mixed fresh herbs ( parsley, basil, oregano and marjoram)
roughly chopped
1/2 coarse black pepper
pinch sea salt
1.5 kg sardine fillets
60 mls olive oil
2 lemons, cut into wedges.
Method
In a shallow bowl, combine flour, herbs, pepper and salt and pepper.
Coat sardine fillets with flour mixture, pressing mixture firmly onto fish.
Heat oil in a large frying pan. Add sardine 4 at a time and cook for
1-2 minutes each side or until crisp and lightly browned.
Serve with lemon wedges and a mixed leaf salad.
