with Basil Aioli

Ingredients

1 clove of garlic, minced
2 tb sp olive oil
1 tb sp lemon Juice
1/2 cup fresh basil leaves, chopped
1 quantity of Parmesan Potatoes.

Basil Aioli

1 cup basil leaves
1/2 cup olive oil
1 clove of garlic, minced
2 egg yolks
3 tsp Lemon juice
1 tb sp water
salt and freshly ground pepper.

Parmesan Potatoes

400g potatoes, peeled and cubed
1 tb sp olive oil
1 tb sp butter
1 tb sp grated Parmesan.


Method

Combine the garlic, olive oil and lemon juice in a dish and marinate the fish steaks for 1 hour.

Grease a broiler pan and broil fish for 3 minutes on each side.

Serve with Basil Aioli and Parmesan Potatoes.

Basil Aioli

In a food processor, place basil, 1 tb sp oil, garlic, egg yolks, lemon juice.
Process until smooth.

With processor running, add oil in a thin stream and beat until thick.
Add water, if liked , to make a thinner aioli.

Add salt and pepper to taste.

Parmesan Potatoes

Place potatoes in a saucepan with salted water and cook until potatoes
are almost cooked, but still a little hard in the center. Drain.

Heat oil and butter in a pan, add potatoes and cook until brown.
Add cheese and cook until potatoes are crisp.
