Snapper fillets

with White Wine

Ingredients

1/2 cups of all purpose flour
1 tsp coarse ground pepper
1/4 tsp sea salt
4 snapper fillets, each 220g
2 tb sp olive oil
60g butter
2 cloves of garlic, crushed
1/2 cup white wine
2 tb sp minced parsley

Method

Combine the flour , pepper and salt in a shallow bowl and coat
the fish fillets evenly with flour, shaking off excess.

Heat oil in a frying pan and add the fish and cook over
a medium heat for 5-6 minutes on each side, depending on thickness
of the fish. Set fish aside on a plate and keep warm.

Wipe the pan , then add the butter. When it has melted
add garlic and cook for 2 minutes. Add white wine and simmer
until the sauce is reduced.

Just before serving add chopped parsley to the sauce and serve with the fish.

Serves: 4-6
