Penne

with Gorgonzola Sauce

Ingredients

500g penne
1 cup cream
1/2 cup vegetable stock
1/2 cup white wine
125g gorgonzola or blue cheese, crumbled
2 tb sp flat leaf Parsley
1/2 tsp ground nutmeg
freshly ground black pepper.

Method

Cook pasta in boiling water in a large saucepan following packet directions
Drain, set aside and keep warm.

To make sauce , place cream, stock, wine and gorgonzola or blue cheese in a saucepan and cook over a medium heat, stirring constantly, until smooth.

Bring to a simmer for 8 minutes or until sauce thickens.

Add parsley, nutmeg and black pepper to taste, bring to simmer and simmer
for 2 minutes. Spoon sauce over the hot pasta.
