Penne
with Tuna, Olives and Artichokes

Ingredients
500g penne pasta
6 tb sp olive oil
2 cloves of garlic, minced
1 cup black olives, seeded
410g can artichokes
2 tb sp capers, chopped finely
440g can tuna, drained.
Method
Cook the pasta in boiling salted water until just cooked (al-dente)
Drain and rince in cold water.
Heat 2 tb sp of oil in a pan, add the garlic and chili peppers and cook for
2-3 minutes. Return the cooked pasta to the pan, add the remaining
ingredients and heat through.
Serve immediately with parmesan cheese.
