Cappellini

(Spaghetti)

with Tomatoes, Garlic and Basil

Ingredients

1/2 cup olive oil
6 cloves garlic, sliced
2 cups beefsteak tomatoes
seeded and sliced

1/3 cup basil, shredded
Salt and Pepper freshly ground

Method

Heat 2 tb sp oil in pan. add the garlic and cook over medium heat,
until the garlic is slightly browned and golden.

Reduce the heat and add tomatoes, basil, salt and pepper and cook for
5 minutes or until the tomatoes are just heated through.

Cook cappellini pasta in boiling water until al dente. Add the remaining oil.

Serve with tomato mixture over cappellini pasta.

Serves: 4-6
