Seared Beef
with Mushrooms and Garlic

Ingredients
50g dried porcini mushrooms
60 mls olive oil
1.2 kg rump or fillet steak, cut into 6 steaks
1 brown onion, chopped
2 cloves garlic, crushed
350g shitake/button mushrooms
60 mls red wine
250 mls brown stock
2 tb sp parsley, chopped
salt and pepper
parsley , chopped (extra).
Method
Preheat broiler
Soak the porcini mushrooms in boiling water for 20 minutes.
Drain and chop, set aside.
Heat oil in a shallow pan and cook beef for a few minutes on each side.
Remove from pan. Saute the onion and the garlic for a few minutes, then add
all of the mushrooms and cook over a high heat until they are soft.
Add the wine and stock, bring to the boil, then simmer for 10 minutes, remove
from heat, add the parsley and season with salt and pepper.
Serve the beef with mushrooms and sprinkle with extra chopped parsley.
