Lamb Cutlets

with Olives and Rosemary

Ingredients

1 tbsp olive oil
2 cloves garlic
8-12 lamb cutlets
2/3 cup white wine
2/3 beef broth
2tbsp tomato paste
2 sprigs rosemary, coarsely chopped
1/3 cup black olives
freshly ground black pepper

Method

Pre heat oven to 350F/180C

Heat oil in pan, add garlic and lamb cutlets, and brown on medium heat
for 2-3 minutes on each side.

Add wine and cook for 2 minutes. Mix the tomato paste with beef broth and
add to the lamb cutlets. Add the rosemary, black olives and pepper.

Transfer lamb to a casserole dish and bake for 30-40 minutes.

Serves: 4
