Orange-Pisachio biscotti

Ingredients

2 cups flour
1 cup sugar
1 tsp baking powder
pinch salt

2 eggs
2 egg whites
1 tb sp finely grated orange rind
1/2 tsp vanilla essence
75g pistachios, shelled and toasted.

Method

Sift together flour, sugar, baking powder and salt in a bowl.

Place eggs, egg whites, orange rind and vanilla essence in a separate bowl and
whisk to combine.

Stir egg mixture and pistachio nuts into flour mixture and mix to make a
smooth dough. Turn dough onto a lightly floured surface and divide into
two equal portions. Roll each portion into a log with a diameter of 5cm.
Flatten logs slightly and place 10cm apart on a nonstick baking tray.
Bake at 180C/350F for 30 minutes. remove from the oven and
set aside to cool.

Reduce oven temperature to 150C/300F . Cut logs into 1cm thick slices
place on nonstick baking tray and bake for 10 minutes or until
biscuits are crisp.
