Choc-Almond Biscotti

Ingredients

2 cups flour
3/4 cup cocoa powder
1 tsp bicarbonate of soda
1 cup sugar
200g blanched almonds
2 eggs
1 egg yolk

Method

Sift together flour, cocoa powder and bicarbonate of soda.
Make a well in the center of the flour mixture, add sugar, almonds and
eggs and mix well to form a soft dough.

Turn dough onto a lightly floured surface and knead until smooth.
Divide dough into four equal portions. Roll out each portion of dough to make
a strip that is 5mm thick and 4cm wide.

Place strips on a baking tray lined with nonstick baking paper. Brush with
egg yolk and bake at 180C/350F for 30 minutes or until lightly browned.
Cut strips into 1cm slices, return to baking tray and bake for 10 minutes
longer or until dry.
