Lemon and Basil Granita

Ingredients
2 tb sp basil leaves, chopped
1/4 cup superfine (castor) sugar
2 cups sweet white wine
1 cup of lemon juice
1/4 cup lime juice
1 tb sp grated lemon rind
Method
Combine basil, sugar and wine in a saucepan over a medium heat
Bring to the boil. Cook, stirring for 3 minutes.
Strain mixture Discard solids cool to room temperature
Stir in lemon and lime juices and grated lemon rind.
Pour mixture into a shallow freezer proof container freeze
until ice crystals start to form around the edges. Using a fork
stir to break up the ice crystals, repeat the process once more
transfer mixture to ice cube tray. Freeze until firm.
Serves: 4-6
