Green Beans
with Prosciutto, Parmesan

Ingredients
6 quail eggs
1 cup baby green beans, blanched
5 thin slices prosciutto, cut into strips
Parmesan cheese, shaved
freshly ground black pepper
sea salt.
Dressing
2 tb sp extra-virgin olive oil
1 tb sp white wine vinegar.
Method
Place quail eggs in a small saucepan of cold water, bring to the boil and
boil for 3 minutes, Rinse under cold water, until eggs are cool, then peel
and cut in half.
Combine the beans, prosciutto, quail eggs and parmesan cheese in a bowl.
Sprinkle with black pepper and sea salt. drizzle dressing over the dish and serve.
Serves: 4-6
