Bruschetta
with Tomatoes and Basil
Ingredients
1 ciabatta loaf or french stick
sliced into 2cm slices
olive oil for brushing
2 cloves of garlic, crushed
1+3/4 cups plum tomatoes, diced
1 small red onion, minced
1tbsp basil, chopped
2 tb sp olive oil
1tbsp balsamic vinegar
salt and pepper, freshly ground.
Method
Toast bread slices for 2-3 minutes on each side
Brush with a little olive oil and spread a thin layer of roasted
pureed garlic on each slice.
In a bowl mix together tomatoes, onion, basil, vinegar and
olive oil and season with salt and pepper.
Serve toasted bread with tomato mixture on top.
Serves: 4-6
