Bruschette

with bocconcini and basil

Ingredients

1 ciabatta loaf, sliced in 3/4 inch slices
1/4 cup of olive oil
1/2 cup sun dried tomato paste
6oz bocconcini or mozzarella cheese - sliced
1/2 basil leaves sliced or whole leaves

Method

Toast ciabatta slices on both sides
Rub with a clove of garlic then
brush with olive oil then spread
with sun dried tomato paste.
Top with cheese slices and basil leaves.
